weekly menu planner 🍕📝

i've said it before and i'll say it a thousand times (because it bears repeating and i am forgetful): planning my family's weekly dinner menu is a total sanity saver. when i don't plan our menu, i end up rushing to the grocery store for quick dinner inspiration, or grabbing random ingredients for a last minute recipe, or we tend to dine out- which leads to not so healthy eating choices. it's a bad habit. and you know what they say, bad habits breed bad habits. not being prepared for our weeknight dinners is frustrating and stressful.

when i'm frustrated, unprepared, and stressed, i can't serve my family well. then the peace in our home is disturbed. it's a crazy cycle.

the one thing that has helped me stay consistent in menu planning is WRITING IT DOWN. i use a notebook, but i also like to use a calendar format so i can post it on the refrigerator and the family can see what's for dinner. it works for me and it works for them! i love serving my family- and this one simple habit sets me up for success.

if bad habits breed bad habits, good habits must breed good habits right?

*TGIT is our standing family date night and we dine out. tip: avoid the weekend rush! restaurants are less busy on Thursdays. YOYO is "you're on your own" for dinner aka eat all the leftovers and clean out the fridge :)

i made this printable menu planner calendar and it definitely helps! you can download and print the menu planner here:

grocery delivery is my new BFF 🛍️

i resisted the grocery pickup bandwagon for as long as i could. i actually enjoy grocery shopping. it's 1-2 hours a week of time that i'm alone yet being super productive, and sometimes finding new treats and fun things in the store while i'm there :) i could probably do our weekly grocery trip at SuperTarget blindfolded and without a list - that's how regular and routine it's become.

so when the grocery pick up service started becoming a thing, i wasn't interested. like, at all. i want to pick out my own avocados, thank you very much.

twice in one week, in two separate conversations, two wise and trustworthy friends each recommended using a grocery delivery service for these very valid reasons:

// give me more time at home with my family
// take 1 thing off of my weekly to-do list
// break the cycle of going to the store for 1-2 things, just out of habit
// help me meal plan so that our dinners are healthy, homemade, and pre-prepped

yes please!

so, i thought i'd give it a whirl. my husband and i researched all the services available, their prices, what products they offered, and the pros and cons of each. we tried loading our regular groceries on the different services available in our area. THIS was the most time consuming part of the process - but worth it. all things thoughtfully and carefully considered, we decided to shop with Amazon Fresh.

once a week now for the past two months, my groceries are delivered to my front porch from Amazon Fresh. and i love it! they have just about everything we need, really great prices, and free delivery.

as we need groceries, i add them to my Amazon Fresh online cart. i place the order on Saturday for delivery on Sunday, usually before 7am! cold/frozen items come bagged together in insulated bags with frozen bottles of water. produce is in separate bags. dry goods are bagged together neatly. easy and fun! Once Amazon Fresh gets to know my shopping habits and preferences, they offer recommendations, and keep a list of frequently purchased items which makes it really easy to remember to buy the things that i like to keep in stock.

i keep a separate list of the specialty things we need that Amazon Fresh doesn't carry. i make ONE trip as needed for non-grocery items (like graph paper, socks, etc.) OR i'll add those to my Amazon Prime cart and place an order as needed.

my heart belongs to Target. the RED card, the Cartwheel, the clearance stickers, the $1 Spot, in store Starbucks...oh how i love Target! but i confess, i have a new BFF: Amazon Fresh. grocery delivery definitely helps me live a "making the most of it" kind of life. ♥️

TAKE AWAYS:
1) listen to your wise friends when they share their life-changing recommendations with you.
2) try grocery delivery!

dinner menu // 21DFX approved

i am starting a round of 21 Day Fix Extreme this week after just completing 80 Day Obsession (yay!). the nutrition plan is a little bit different on this program and i'm planning my dinners accordingly. the biggest difference between 80DO and 21DFX is 80DO focused on timed nutrition, specifying certain foods to be eaten at certain times of day, whereas 21DFX specifies which foods to eat but offers the flexibility of when to eat them. frankly i liked the timed nutrition because it took the guesswork out of when/what to eat. but i think i can apply that practice to my 21DFX plan!

(if you're interested in or curious about 80 Day Obsession or 21 Day Fix Extreme, feel free to reach out to me! click the health+fitness tab or find me on Instagram and send me a message)

taking all of that into consideration, here are the dinners i've planned for this week + links to recipes that are all 21 Day Fix approved:

this week's dinners // 80 Day Obsession approved

there is a saying i've heard that fitness is 20% what happens in the gym and 80% what happens in the kitchen, or something like that. i'm not sure if it's 100% accurate, but i do believe there is some truth to it that exercise and nutrition go hand in hand. well, this week i am starting a new fitness program called 80 Day Obsession and with that comes a new nutrition plan! i considered sticking with Whole30 during 80DO, because i love love love Whole30, but after looking more into the workout program, i realized i'll need to adjust my nutrition so i can stay strong and healthy. the biggest difference will be that i'm adding into my diet very specific portions of healthy carbs and healthy fats.

(if you're interested in or curious about 80 Day Obsession, feel free to reach out to me! click the health+fitness tab or find me on FB to join the free 80 Day Obsession accountability group.)

with all of that into consideration, here are the dinner plans i've made for this week:

1. cherry pork roast in the crockpot
2. chicken fajitas in the crockpot
3. lentil pasta (modern table was on sale for 49c at target! yeah!) with organic garden vegetable ragu
4. eggwhite omelet

hope you all have a happy, healthy week!

this week's menu // whole30 dinners

two trend trains i'll gladly jump on any day: menu planning and whole30. i'm kicking off 2018 on both!

menu planning is a SANITY SAVER for me. when i don't meal plan, i end up at the grocery store several times a week for last minute dinner decisions or random things i need for a quick recipe, and we tend to dine out too often which leads to not so healthy eating choices :-/

whole30 is honestly my favorite and preferred way to eat. it emphasizes whole foods and eliminates sugar, alcohol, grains, legumes, soy, and dairy. (sounds harder than it actually is) all it takes is a few days of eating like this for me to feel healthy and clean, and realize how my body rejects and reacts negatively to those things i'm eliminating. it isn't a diet, and i don't feel restricted. instead, i feel like i'm treating my body really well with proper nutrition, and my body thanks me with good sleep, healthy and substantial energy, healthy skin, mental alertness, and physical wellness.

here are the #whole30 approved dinners i'll be making this week, linked to the recipes:

1. crockpot herbed chicken
2. sloppy joe bowls
3. taco bowls
4. breakfast hash
5. hearty vegetable soup
6. grilled chicken salad (no recipe, just simple)

here's to happy, healthy meal planning & eating!

DINNER IS SERVED 🥕 // our go-to menu

what's for dinner?

i love/hate that question.

i love it when someone asks me what's for dinner and i have an answer! i feel so accomplished and prepared! even better when the food is prepped and i've remembered to thaw the meat or put it in the crockpot.

but when i hear "what's for dinner?" and i don't have an answer? it's the worst! i feel like a total slacker and failure, and why are you always hungry?! ;) as it turns out, my people like to eat dinner every night.
i used to be so good at menu planning - and blogging about it! (and apparently i need to read and heed my own advice for sticking to meal planning!) i'm not as consistent at it as i used to be but i'm trying, because it really makes my life so much easier when i have a week of dinners planned in advance.

something that has helped TREMENDOUSLY is our go-to weekly dinner menu:

monday // crockpot
tuesday // tacos!
wednesday // Asian or Italian
thursday // family date night out
friday // leftovers or something easy

the recipes vary week to week, based on the "theme" of the night. the "themes" are pretty much a given, and make it super easy to put together a menu. all i have to do is find recipes to fit the theme of each night. it's a dinner meal planning hack!

here is how i use the go-to menu to plan our dinners each week:

my crockpot is my bestest friend on monday nights. mondays are currently the nights when we get home from kids' extra activities well past our regular dinner time, so it's nice to have dinner ready and waiting. my favorite sources for crockpot recipes is Make it Fast, Cook it Slow by Stephanie O'Dea, and by searching #crockpot on Instagram.

tuesdays are taco tuesdays, duh. but it's not always tacos. it's always some variation of easy Tex-Mex: taco salads, enchiladas, burritos, nachos. basically anything that goes good with chips and salsa because let's be honest that's the real star of the show.

on wednesdays i alternate between Asian food and Italian food. my family's favorites are chicken and veggie stir-fry, orange chicken, and honey seared chicken, served with rice. or, if it's an Italian week wednesday, i'll make zoodles, veggie pasta, turkey meatballs, spaghetti squash, or homemade pizza.

thursdays are our family date nights and we go out to eat. this is something we started doing years ago, when our kids were very young, because we realized 2 things: by thursday i'm done cooking, and restaurants are considerably less crowded on thursdays than they are on fridays. we all look forward to thursday nights because it's good quality family face time. plus no cooking and no dishes to wash

because sometimes we have plans and sometimes we don't, i like to keep friday night dinners easy peasy. if we don't have plans and we are eating dinner at home, i'll make sandwiches or breakfast for dinner, nachos (if we didn't have them on tuesday), or something from the freezer like chicken pot pies. the key here is to always have miscellaneous ingredients on hand to throw something together quickly. otherwise, it's leftover buffet! or pantry challenge!

having this go-to menu makes it easier (and more fun) to try new recipes, takes most of the guesswork out of figuring out what to make for dinner, and helps me be prepared for the dreaded WHAT'S FOR DINNER question. because let's face it: they're going to want dinner pretty much every night forever! i might as well be prepared :) my go-to menu has been very helpful for my weekly meal planning, my family is well-fed, and that makes me happy!

do you have a go-to menu? what are your meal planning hacks?

this week's menu: healthy comfort food

it's getting colder here. the leaves are starting to change. i turned the heater on in the house, and i pulled my coat out from the back of the closet this weekend. we're all craving comfort food to warm us from the inside out. this week i'm putting my crockpot to work and making healthier versions of some new and favorite recipes.

here are our dinners this week with links to the recipes or ingredients:

chicken quinoa soup this is a new recipe i'm trying this week. it looks so warm and delicious, perfect for these chilly Fall days! i'll modify to make it 21DF by using natural seasonings instead of the dressing packet, and mixed veggies instead of corn because of allergies.

slow cooker pork BBQ pork goes hand in hand with Fall, like football games and pumpkin spice and boots and scarves. this recipe is new to me but when i saw it i thought it was ideal for this time of year. i'm making it healthy by subbing the soda for La Croix and a Tbsp of brown sugar, and using Annie's natural BBQ sauce. serving it without bread, with coleslaw.

chicken soft tacos i'll need to give a the crockpot a night off so we will have warm corn tortillas with grilled chicken and chopped peppers. corn tortilla chips and organic cantina salsa on the side. super simple but yummy. taco night is probably my favorite every week.

gluten-free lasagna we are having company over for dinner one night this week and lasagna is on the menu! i wanted a big, warm meal that everyone likes. i found gluten-free lasagna noodles! i'll make it with lean ground turkey, natural, no sugar added tomato sauce, and natural cheeses.

looking for more meal inspiration? i posted some of my all-time favorite Fall recipes HERE and all my menu planning monday posts are HERE.

happy cooking, kitchenistas!

5 ways i save at Target

every week, i go to Super Target to buy our family's week's worth of groceries. i have done my primary grocery shopping at Super Target for the past 5 years or so. before that, i was shopping at a different grocery store regularly, but when God answered my prayers for a Super Target near me, and after i did some price comparing, i made the switch and committed my grocery list to Target. i love me some Target. once in a while, i'll try another grocery store just to see if Super Target is still best, and Target always wins. here's why:
QUALITY
PRICE
and SELECTION.

not to mention RED CLEARANCE STICKERS, IN-STORE STARBUCKS, and the overall Target EXPERIENCE. i'm craving Target as we speak.

Target has the best price and quality on the foods, brands, and products we are loyal to. but even with the best pricetag, i've found ways to SAVE EVEN MORE money at Target. on average, i save $12 a week doing these 5 things regularly:

1. coupons i am not an extreme couponer by any means. but i do like to use coupons on products that i already buy. Target has both mobile coupons and printable coupons. i forget to print coupons most of the time. the mobile coupons come to me via text message once a week and it's super simple- i just show the cashier the barcode that appears when i click the link in the text, they scan it, and bam- discount. i frequently check both options to see if they are offering anything on my shopping list, and there are usually at least 3 coupons that i can use each week.

2. Cartwheel app this is my favorite. the Target Cartwheel is like a secret sale. on Cartwheel, there are items marked down 5% or more that aren't otherwise advertised on sale. the Cartwheel sale items are usually Market Pantry, Simply Balanced, or Archer Farms brands, but not always! for instance, we like Hunt's Natural Ketchup with no HFCS. right now with the Cartwheel app i can save 15%! without the Cartwheel app, i pay full price. every week, i make my grocery list and then i go to the Cartwheel app to see what if there is a "secret sale" on anything on my list. i "load up" my Cartwheel with the items i am buying that are discounted. at check-out, i show the cashier my Cartwheel barcode and my grocery total goes down sometimes $5! i have saved $70 since i started using the Cartwheel app in December.

3. Target REDCard Debit it took me a long time to decide to do this, but once i did i am SO GLAD. every time i shop i get 5% off right there at the register. plus, if i shop online at Target.com, i get 5% off AND free shipping. the money comes straight out of the same bank account i would otherwise be using to buy groceries, no extra fees or anything. what's the catch? they might be tracking my purchases. so that they can offer me MORE DISCOUNTS.

4. bring my own bag i try to always remember to bring reusable shopping bags with me to Target because they will take 5 cents off for every bag i use! if my groceries fill 4-5 bags, that's a quarter, people! i know it's not much but it adds up AND saves the planet. all those conference/event swag bags? #reusablebagsFTW

5. price match Target's price match guarantee is super easy and ideal. find the same product elsewhere for cheaper, and pay that price at Target. and you can even use a coupon on top of that. booyah.

i was reading Proverbs 31 this weekend, and like really reading it, studying each word and cross-referencing in different versions...and God impressed on my heart how i can be a "virtuous woman" in today's world. i started looking at my life and the way i spend my time and energy in the context of Proverbs 31, and yada yada yada, this post. i am encouraged to know that God cares about how i research and save money for my family!
She goes to inspect a field and buys it; with her earnings she plants a vineyard. She is energetic and strong, a hard worker. She makes sure her dealings are profitable; her lamp burns late into the night. Proverbs 31:16-18

inspecting a field or searching for coupons, energetic, strong, hard-working, making sure to get the best deal...a virtuous woman making the most of it :)

what we eat and why

i'm going to visit my bff jamie soon. she lives in california with her husband and they just had their first baby! i can't wait to love on that precious baby! jamie and i have been besties for 20 something years so it's safe to say she knows me pretty much the most. she called this week to chat about our upcoming visit, what time will we arrive, how long can we stay, what do we want to do, and ohbytheway what do you eat? i laughed. she knows. she knows about the 7 years i was a strict vegetarian. she knows about my vegan tendencies. she knows there have been times when we're on the daniel fast. she knows my kids have never had poptarts. however finicky or unusual or peculiar our eating habits, the truth is this: WE LOVE TO EAT.

i eased jamie's concerns by letting her know it's totes NBD, we will eat whatever, we are easy going and adaptable, and yes, i will eat meat. did i mention jamie and her husband own a BBQ restaurant?! definitely having me some smoked BBQ!

it got me thinking about what we eat and why. it comes up in conversations from time to time. to organize my thoughts and document it sort of officially, i made a list of what we eat and why, with some links to further research:

* i prefer a vegan diet. i just like the way my body feels when i eat a clean, plant-based diet. i am lactose intolerant, so no dairy anyway. (i miss cheese the most) my family, however, eats meat, mostly chicken or turkey. almost no red meat. very little pork. when i buy meat i don't mess around- i get the best quality, organic, all-natural, free range and all that jazz. it's worth it to me.

* no hfcs and no artificial sweeteners. it's just junk. i've done enough research to know that if i'm going to have sugar, good ole' cane sugar is best. but if possible, i like to avoid white sugar when i can. i like to sweeten with organic local honey or organic maple syrup.

* our son eats gluten-free. we learned almost three years ago that his body and brain reacts negatively to red dye, high fructose corn syrup, sugar, and gluten. he's only 5 so it's not like it was very difficult to make the change to his little diet. we all made the switch Udi's GF bread for sandwiches, i bake with GF recipe adaptions, and i make sure his on-the-go snacks are GF. i'd say his diet is about 95% gluten-free and his body and brain are thankful. every now and then he'll have a flour tortilla or a cookie from the Target bakery and we just brace ourselves for the aftermath.

* the fewer the ingredients the better. i try my darndest to stay away from processed foods. every time i find myself reaching for a box or jar of something processed, i ask myself: can i make a healthier version of this? and almost always the answer is yes, Eryn, you can. but there are some exceptions. like my son's breakfast bars. they are gluten free, whole grain cereal bars with no artificial ingredients, no hydrogenated or GMO oils, and no hfcs. and when i look at the list of ingredients on the side of the box, nothing scares me. the list isn't that long and i know what each ingredient is. same with breakfast cereal. we only buy Chex, plain/honeynut Cheerios, and the occasional a box of Raisin Bran. i never buy food that i think i can make myself, or if the ingredient list isn't super simple. it's easy to buy the boxed stuff, i know. but in this case, the easy thing isn't the right thing. the key here is this: if i don't buy it, it won't be in the house, so they won't eat it. i'm training up taste buds!

* fast food. the smell of mcdonald's french fries used to be like heaven. now, i wouldn't touch that place with a 10 foot pole. the more i know about food, the more careful i am about which foods i eat. and let's just say i know too much about mcdonald's food to ever eat there or feed it to my kids. dimethylpolysiloxane is a type of silicone and also an ingredient in chicken mcnuggets. so there's that. when we have fast food, which is about once a month, we go to chik-fil-a and choose the healthiest options from the menu - based not on calories but on ingredients. we also really like zoe's kitchen and the made-to-order salad/sandwich counter at whole foods market. other than that, we steer clear of fast food as much as possible. (i did show my kids the time-lapse video of mcdonald's food not changing one bit. it was a lesson in preservatives. #homeschool)

* water, water, water. we don't drink juice or sodas. clarification: we only drink our own homemade juice, sparkling water (simply carbonated water with natural flavor), and the concessional (cane sugar) root beer for a special treat. my husband and i have coffee in the morning, and sometimes afternoon tea. my kids have a cup of organic low-fat milk a day. other than that, it's all water all the time. it's the good stuff and i don't take it's accessibility for granted. when my kids offered a juice box, they get so excited and say YES PLEASE! but after a sip or two, they're pushing the juice away and asking for water instead. that thing i said about training up taste buds? truth.

* so what do we eat? we eat totally normal, simple, clean foods. here's a complete run-down of what we ate today, with (NON affiliate) links to the actual brands/products (if available) - for breakfast, my son had his bar, a yogurt, and a banana. my daughter had a bowl of Chex and a banana. i had coffee. for lunch, my kids both had peanut butter and jelly wrapped in warmed flour tortillas. i had a smoothie made with whey protein powder, PB2, organic frozen berries, a handful of organic kale, a banana, and organic coconut milk. we had an orange and grapes for snack. for dinner we're having organic vegetable soup (canned) with organic veggie burgers that i'm praying my kids will eat. pass the (organic) ketchup! if we're in the mood for dessert, our choices are jelly beans (for the kids 1 per year old they are), vanilla ice cream, (coconut ice cream for moi) or GF kit-kat wannabes. there is currently no nutella in my house because it is so good in all the wrong ways.

* grocery list & menu planning has helped me keep track of our eating habits and stay consistent, so it really is a way of life and not just a passing trend. i plan dinner menus weekly and grocery shop accordingly. when i need a recipe or inspiration for a meal, my two go-tos are pinterest, musings of a housewife, and the pioneer woman. i modify recipes to be gluten-free, or i substitute healthier ingredients. here are my recipes, my Make Serve Eat Pin Board, and my menu planning posts.

....annnnnd that is a lot of information. more than you probably ever wanted to know about me. or maybe not? maybe you've always been curious.

what do you eat and why? do tell

no bake gluten-free granola bites

when we went over the river and through the woods for Christmas, i wanted to pack an easy, healthy and gluten-free snack for us and to share at Grandma's house. i looked in the pantry and came up with these no-bake granola bites, featuring Udi's Granola

Udi's Gluten Free Vanilla Granola is gluten-free oats, wildflower honey, vanilla, and almonds. it's delicious on it's own straight out of the bag or in a bowl with milk. and when mixed together with Nutella, honey, and vanilla, it makes a yummy snack!

here's the super simple recipe:

1/2 C Nutella
1 tsp pure vanilla extract
1/4 C raw honey
1 tsp lemon juice
dash ground cinnamon

mix all ingredients together in a big bowl. refrigerate for at least 30 minutes, longer is okay. spoon into bite-size balls, about the size of ping-pong balls, into cupcake liners. store in air-tight container in refrigerator until ready to serve and eat.

enjoy!

(thanks for the granola, Udi's!)

this week's gluten-free menu

whew! what a mega-fun whirlwind birthday weekend! i went all kinds of crazy eating sugar and gluten and didn't count a single calorie. my brother's girlfriend {a professional chef} made the most delicious pumpkin cupcakes that i've ever tasted in my 33 years, and my sweet friend who lives across the street made melt-in-your-mouth fudge brownies that i couldn't resist. between my birthday, the State Fair of Texas {God Bless Big Tex}, and having family in town {extra mouths to feed}, we ate good. it was great, but i am definitely ready to get back to normal sleeping, normal schedules, and most of all, normal eating.

our new normal is gluten-free and sugar-free.

here is this week's menu:

h- waffles, eggs, bacon
f- leftovers

have a great week & make the most of dinnertime!

gluten-free: learning as we go & this week's menu

our family is on this gluten-free adventure together and we are learning as we go. i have learned, for instance, that gluten-free pasta needs to boil a little bit longer than regular pasta, all Boar's Head products are gluten-free, all leaf tea is gluten-free, Bisquick makes a gluten-free mix, and gluten-free bread makes tasty grilled cheese sandwiches.

i have also learned that if a banana muffin recipe calls for "gluten-free baking flour," gluten-free multi-purpose flour is not a suitable substitute...unless you like banana flavored hockey pucks. my kids {and i} licked the homemade gf frosting off the tops and chucked a dozen banana hockey pucks in the trash can. #gfbananamuffinfail

did you know Chick-Fil-A has a pretty decent selection of gluten-free options on their regular menu? yahoo! and one of our family's favorite restaurants, BJ's Brewhouse, has an extensive allergen-friendly menu that includes a gluten-free version of their signature Pizookie! i'm learning fast about how and what to eat at restaurants and when we are out and about. there's an app for that.

because we are not allergic to gluten, we can be a little bit flexible in our eating when we are away from home. i'll allow the kids to have a non-gf cupcake at a friend's birthday party, and non-gf tortilla chips before dinner at our favorite Mexican food place. that said, i can tell when the kids have had gluten/processed foods by their energy levels {unstable}, and consequently, their behavior {ornery}. when we are all gluten-free we feel better, we behave better, and our bodies are thankful for no extra junk.

it's a choice. it's a lifestyle. and we are learning as we go!

m: mexican chicken lettuce wraps
t: albondigas locas soup
w: brinner {breakfast for dinner}
h: BLAT sandwiches {bacon lettuce avocado tomato}
f: ground turkey & black bean nachos

bringing menu planning back

source

i used to be a menu planning superstar. i planned our whole week's dinners, did the grocery shopping once a week, prepared and served our family meal every night at 5pm. menu planning was part of my routine for such a long time, and it worked well for us. family dinner time was nonnegotiable.

and then Hubby's commute from his office was extended, bringing him home later in the evening, making family dinner together nearly impossible. the kids and i ate dinner alone most nights, and i warmed Hubby's plate in the oven when he came home at 7:30 or 8.

menu planning, as much as i loved it, seemed pointless. i began making a single-serve dinner for myself, heating one up for Hubby when he got home, and serving the kids something entirely different, easy.  i quit putting forth much effort because i didn't think anyone would notice. to be completely honest, i was lonely and discouraged. i missed our family dinner time. i missed the beginning-to-end process of planning our meals.

regardless, i am incredibly thankful for my husband's career. i am so grateful for his commitment to providing for our family. i know it requires great sacrifice on both of our parts, and i pray for strength through this season.

i cherish our family dinners and will fight like mad to protect that time together. i can't give up in this season where hours are changed and nights are longer. for the sake of my family, even if no one is here to notice, i'm bringing menu planning back.

here is our menu plan for this week:
monday- Be Free chicken enchiladas
tuesday- Be Free quinoa with black beans
wednesday- brinner
thursday- Be Free guacamole burgers

family dinner time is nonnegotiable. i'm excited to get back into this routine and to make family dinner time a priority again!

do you plan your dinner menus? is family dinner time important in your home?

this week's menu + my fave Fall recipes

Mid-Century Orange Enamel Cookware Set

these vintage pots found on etsy remind me of the warm yellow kitchen in the little house where i grew up. maybe my mom had a similar set? my most vivid memories of that house are of the kitchen and dining room. and for some reason, the smells of Fall- stews, chili, roast, cornbread- take me back to the kitchen in that little house on Westwood Drive.

what smells, what season, reminds you of home?

it makes me wonder, with a smile, what smells will remind my grown children of these years in our home? the thought of it reminds me to be intentional, to engrave memories in all of their senses.

these are the dinners i'm making this week with links to the recipes:
open-face grilled cheese with tomato slices and tomato soup
eggplant & zucchini casserole with quinoa
creamy avacado pasta with garlic toast

it's almost October and i am in the mood for Fall! is it Fall in your neck of the woods? it probably won't feel like Fall here for a few more weeks, but that won't stop me from making it feel, taste, and smell like Fall in my home!

here are some of my favorite Fall-time recipes (with links, photos from the recipe link)... come on Fall-time temperatures!

this week's menu: pantry challenge

do you ever find an odd ingredient in your pantry and can't remember why in the world you bought it? that happens to me all the time, but especially lately since i've been trying new vegan recipes. before my grocery trip this week i found in my pantry many cans of cannellini beans, black eyed peas, sweetened condensed milk, and cream of celery soup. what in the world?

i am determined not to let that happen again and to use up what is in my fully (but oddly) stocked pantry this week. after assessing the situation and planning our meals accordingly, i only needed a few fresh ingredients from the grocery store. my grocery bill was $35.

here is this week's menu with recipes:

monday: tomato soup with grilled cheese sandwiches
tuesday: Texas caviar with cornbread
wednesday: stir-fry rice and veggies with tofu
thursday: giant salad
friday: 3 bean vegan nachos

Texas Caviar there are many variations of this recipe but basically it's beans and chopped veggies, served as a dip with tortilla chips or over corn bread.

2 cans black eye peas, drained & rinsed
2 cans dark kidney beans
1 can sweet corn (unsalted), drained
diced zucchini
diced tomato
fresh chopped cilantro
1 Tbs minced garlic
dash olive oil
dash red wine vinegar
salt & pepper to taste

combine all ingredients & chill before serving.

3 Bean Vegan Nachos
at least 1 can black beans, drained & rinsed
at least 1 can vegetarian refried beans
at least 1 can cannellini beans, drained & rinsed
shredded vegan cheese (i like this kind http://www.daiyafoods.com/)
tortilla chips (i like organic white corn)
salsa

preheat the oven to 350 or set to broil. spread tortilla chips out on a baking sheet. cover the chips with layers of beans. top with shredded cheese. bake at 350 for 15ish minutes or on broil for 5 minutes at a time until the cheese is melted. serve hot from the oven with salsa on the side.

this week's menu: veganish

Apple Dapples! by brk, on Pix-O-Sphere

eating vegan has been easy and good for me. i plan to continue this veganish lifestyle! veganish, because i am not 100% vegan 100% of the time. you see, i'm not trying to make my life or anyone else's difficult by being a vegan. i refuse to burden anyone with my dietary restrictions. for instance, at the Mamas Write Mini-Conference last weekend, the catered lunch was ham or turkey sandwiches and chocolate cake for dessert. sure i could have packed my lunch, ordered a specialty lunch, or eaten just the potato chips. but i needed the fuel (and the chocolate cake looked divine) and i didn't want to cause a fuss. so i ate a little turkey sandwich. no cheese. and i had some chocolate cake. and i didn't feel guilty about it. and then i had quinoa and lentils for dinner, so there. veganish.

here is this week's menu with links to recipes:
monday: baked potatoes w beans and greens
tuesday: black bean & white bean quesadillas
wednesday: falafel subs (falafel balls in hoagies with marinara)
thursday: "chicken" roll ups using gardein meat-free crispy chicken
friday: Mediterranean pizza (frozen Archer Farms all-natural)

also on the menu this week: Flax GloBalls!

what are you eating or cooking this week?
