when we went over the river and through the woods for Christmas, i wanted to pack an easy, healthy and gluten-free snack for us and to share at Grandma's house. i looked in the pantry and came up with these no-bake granola bites, featuring Udi's Granola.

Udi's Gluten Free Vanilla Granola is gluten-free oats, wildflower honey, vanilla, and almonds. it's delicious on it's own straight out of the bag or in a bowl with milk. and when mixed together with Nutella, honey, and vanilla, it makes a yummy snack!
here's the super simple recipe:
1/2 C Nutella
1 tsp pure vanilla extract
1/4 C raw honey
1 tsp lemon juice
dash ground cinnamon
1 12-ounce bag Udi's Gluten Free Vanilla Granola

mix all ingredients together in a big bowl. refrigerate for at least 30 minutes, longer is okay. spoon into bite-size balls, about the size of ping-pong balls, into cupcake liners. store in air-tight container in refrigerator until ready to serve and eat.
