Foodie Friday: Made with Love

This week, one of my sweet friends is going thru something...stressful. That is the best word I can think of to describe it right now. Her husband was in a car accident. Hit head-on by a tractor trailor. And by the Grace of God he survived with only a broken arm. But the miracle that took place doesn't take away the hassle and heartache of having to deal with insurance, lawyers, police reports, doctor's appointments, new and rental cars, and strange body aches. They are thanking God with every breath right now, but it's still stressful.

She's my friend and I want to help. So, naturally, I am bringing the family dinner. Dinnertime responsibility typically falls on the Mom. And when the family goes thru something like this, dinnertime is the last thing on her mind. (Yes, I speak from experience.) It is truly a blessing to have dinner delivered to your doorstep, anytime really, but especially when times are tough, nights are long, and stress is high. (Yes, I speak from experience.)

Using what I had, I made BBQ Chicken & Potatoes in the Crock Pot, and vanilla pudding parfaits for dessert. Comfort food, made with love, for a friend in need.
BBQ Chicken & Potatoes
-6 or so small red potatoes, washed but not peeled or sliced
-1/2 jar BBQ sauce
-4 B/S chicken breasts
-1/2 c water
Put all ingredients in Crock Pot on high for 4-5 hrs or low for 7-8 hrs. Serve with love.
Vanilla Pudding Parfaits
-1 box vanilla pudding
-1 c fresh or frozen berries (I used organic frozen blueberries)
Prepare pudding using microwave instructions on the package. Once the pudding has thickened, sprinkle the fruit in the pudding. The berries will sink in, creating a layer about midway down the bowl. Refrigerate an hour or so. Optional: sprinkle more berries on top just before serving.
