if you give a mom a cookie...

especially if you give this mom this cookie... stand back and please don't stare as she devours it slowly, tasting and enjoying every single bite. put this on your to-do list for this month: try this super simple and oh so yummy recipe for Pumpkin Cookies which are actually fluffy and soft inside like muffins. can't recall where i found the recipe, but mmmmm so glad i did.

ingredients
2 1/2 c flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 1/2 c sugar
1/2 c softened butter
1 can pumpkin
1 egg
1 teaspoon pure vanilla extract
*for fun we added "halloween" sprinkles

directions
preheat oven to 350. mix flour, baking soda,baking powder, cinnamon, nutmeg and salt in a medium bowl. in a seperate bowl, mix sugar and butter. add in pumpkin, egg and vanilla. mix well. pour the pumpkin mixture into the flour mixture and mix well. drop by spoonfulls on ungreased cookie sheet. *add sprinkles. bake for 18 minutes for soft cookies, 22-25 minutes for crispier cookies. let cool a few minutes {or not} before devouring.
now...i must come up with an explaination for daddyhall when he comes home and the house smells like freshly baked cookies but there aren't any cookies in sight. because. i. ate. them. all.
